Oatmeal Raisin Cookies

Oatmeal raisin cookies......don't they just remind you of childhood and/or summer time?! Especially if they are taken out of the oven at the exact moment of doneness and they are extra soft and chewy. Which is exactly how my cookies turned out. *pats self on back* I must apologize in advance for not having a picture. The craziest thing happened: I dropped my phone in a toilet and well everything was destroyed. Anywho let's get to the recipe....

Oatmeal Raisin Cookies

1       cup unbleached  all purpose flour *I used bleached because I didn't have unbleached and they turned out great*
1/2    tsp baking powder
1/2    tsp baking soda
1/4    tsp salt
1       cup(packed) golden brown sugar
1       stick of butter
1       large egg
1       tsp vanilla extract
1 2/3 cups Quaker Oats Oatmeal
1       cup raisins

Preheat oven to 350 degrees F and line two baking sheets with parchment paper. In one bowl, whisk together the flour, baking powder, baking soda and salt to blend. In another bowl, beat the brown sugar and butter until well blended using an electric mixer. Then beat in the egg and vanilla extract. Add in the flour mixture and mix until blended. Lastly, STIR in the oats and raisins
***DO NOT try to do this with the electric mixer!! You will probably get oatmeal raisin cookie all over you, your walls and any innocent bystanders. Trust me. I know I said to stir the oats and raisins in but you can also use your hands to mix them in as well. 

Using a cookie scoop, scoop about 2 tablespoons or so of dough onto your baking sheet two inches apart. Bake cookies for 15 minutes EXACTLY, reversing the baking sheets at the halfway mark. Transfer cookies to a plate to cool after removal and once they are cool enjoy!! If you have any leftover cookies(I doubt that you will because my cookies disappeared in 5 minutes), you can store them in an airtight container at room temperature.

It is very important to only bake these cookies for 15 minutes. If you bake them any longer than that they will turn crispy and get really hard as they cool. When you take them out of the oven they will look really light but once they cool they will darken and they will be golden brown and soft and chewy.

In the Beginning.....

There was a 20-something girl, a few mixing bowls, an oven and a desire to bake her way through a dessert cookbook. However, she was a bit hesitant at starting such a task but after a few pep talks from this guy, who shall be referred to from now on as Greatest Guy Ever(GGE), she bought her first dessert cookbook. And the rest will be history.... But before we get to the history I guess I should introduce myself. I am a 24 year old 2010 graduate of Georgia Tech where I majored in Electrical Engineering. After graduation I worked for an energy company up until a few months ago, victim of the economy you know, but now I have this great position at a new company, yea I bounce back. In my spare time I bake up a storm, kick box and I really like to read. I'm also kind of random, but I'll try to keep any tangents to a minimum.
